Summer! Could there be a sweeter, happier word, one so full of the promise of fun (and sunburns, the pool/beach and lazy days sitting in a hammock under a tree reading a book)?
But we digress…
Summer days can be quite humid in most parts of the country and if not humid, at least hot. Cool drinks are called for: lemonade, iced teas, sherbet drinks, and iced coffees!
Take a look below for two iced coffee recipes we think you will love.
Perfect Iced Coffee
This recipe comes courtesy of DamnDelicious.net.
Brew your coffee the night before and leave it overnight so that it gets to room temperature by the next day.
You will need:
- One-half cup of sugar
- One-half teaspoon of vanilla extract
- One cup coffee, at room temperature
- Two tablespoons of half and half (or to taste)
To make:
- Combine sugar and one cup of water in a medium saucepan over medium heat. Stir until the sugar dissolves. Let cool completely and then stir in the vanilla extract. Set aside
- Pour coffee over ice. Add the half and half as well as the “simple syrup” you just made, above.
Ultimate Iced Coffee
This iced coffee recipe recommends using a mid-roast ground. Darker may be too bitter. The recipe comes from AllRecipes.com.
You will need:
- One-third cup of ground coffee, cold brewed
- One and one-half cups of filtered water
- Coffee ice cubes
- Two packets of sugar substitute (Sweet’N Low was recommended)
- Milk (if desired)
To make:
- Take a tall glass and place the coffee ice cubes in it. Pour the cold-brewed coffee over the cubes and sweeten to taste. Add milk if desired.
To make the cold-brewed coffee:
- Place the ground coffee in a glass jar and add the water. Stir. Cover and set aside at room temperature overnight (or for 12 hours).
- Strain the coffee through a paper coffee filter (size large), or a fine sieve or even a cheesecloth-lined strainer. The coffee can be placed in a refrigerator in a covered jar for up to 24 hours.
Note: cold brewing results in coffee that has a more complex flavor with less bitterness/acidity than coffee that is brewed hot.
