Once Memorial Day arrives in just a couple of weeks, chances are good you’re going to fire up the grill at some point during the long weekend. If so (and even if you’re not entertaining friends and family), why not treat yourself to New York steak strips with this scrumptious Java with stout glaze recipe courtesy of restaurateur Guy Fieri (found on the FoodNetwork.com)?
Makes four servings.
You will need:
- One-half cup of medium grind Italian roast coffee.
- One-half cup of freshly cracked black peppercorns.
- One-quarter (plus two tablespoons) of packed dark brown sugar.
- One-quarter cup of kosher salt.
- One-quarter cup of granulated garlic.
- One and one-half tablespoons of cayenne pepper.
- One and one-half tablespoons of paprika.
- Four thick New York strip steaks (1.5- to 2-inch).
- Two tablespoons of olive oil.
- 16 ounces of stout.
- Two tablespoons of unsalted butter (at room temperature).
To make:
- Pre-heat your oven to 425 degrees F.
- Take your coffee, peppercorns, one-quarter cup of the brown sugar, the salt, garlic, cayenne pepper, and paprika and mix in a small bowl.
- Get the steaks and press the mixture into them firmly.
- Cover the steaks and let them rest for 30 minutes at room temperature.
- Take a large sauté pan and heat the oil in it until the oil almost smokes.
- Add the steaks and sear them two to three minutes on each side (don’t overcrowd the pan; use two pans if necessary).
- Remove the steaks and place them in a baking dish and finish cooking them in the oven until they reach your desired degree of “done.”
- Place them on a cutting board/platter and slice them after 10 minutes.
- While you’re doing this, bring the stout to a simmer in a small saucepan and reduce by about one-third.
- Remove the stout from heat and whisk in the butter and two tablespoons of the brown sugar.
- Once the steaks have “rested,” pour any leftover juice from the cutting board/platter into the stout sauce and serve with the steaks.
